Shiraz 2004 - Robertson Grapes: Shiraz 2004. Robertson, Deep red limestone rich soil. Saratoga stud farm, opposite the well known Bon Courage Estate and in close proximity to De Wetshof Wine Estate. The StoryVolume: 1800 Bottles (6 barrels)
Grapes: Shiraz 2004. Robertson, Deep red limestone rich soil. Saratoga stud farm, opposite the well known Bon Courage Estate and in close proximity to De Wetshof Wine Estate.
Harvesting: Early morning late February 2004 with a sugar of 25.5 Balling.
Fermentation took place in small Stainless steel open top fermenters. For optimum extraction I used the punch down technique every 2 hours during peak fermentation.
Malo-lactic fermentation took place in new French (50%) and new American Oak (50%) barrels. The wine aged 12 months in Oak. The wines were racked, fined and bottled in the last week of April 2005.
This Shiraz is cherry red in colour, with a remarkable and typical Shiraz spicy nose. On the palate we get a sweetish berry fruit with undertones of vanilla and pepper spice. The wine has very soft tannins and is ready for immediate consumption, with medium to good ageing potential (3 years).

Acid: 5.22 g/l
Residual Sugar: 1.49 g/l
