You can never force a wine, you just need to follow the road you're on. The journey normally starts with a friend, which typically leads to another friend, new areas and vineyards. Ultimately I end up with a wine that expresses the journey more than the actual destination, a combination of these people and their habitat.\u003c\/p\u003e\n\u003c!-- \/wp:paragraph --\u003e\u003c!-- wp:paragraph --\u003e\n\u003cp\u003eThe perfect example of such a wine is the \u003cstrong\u003eMoment of Silence\u003c\/strong\u003e. It's been a journey of epic proportion from the first vintage in 2007 until today - the release of the 2021 vintage. It all started off with a friend, Jan de Villiers, who took me to Wellington to meet a farmer. To be honest, I wasn't too keen on the area at first but by lunchtime that day I had completely changed my view. What made that meeting so significant in hindsight, was that I was unknowingly about to buy grapes from a farm originally owned by my direct family 7 generations ago and our meeting that day took place around the original Hauptfleisch dining room table owned by my family! It was only after 2 vintages of buying these grapes and making Moment of Silence, that my mom discovered this whilst doing a family tree - quite a confirmation don't you think?\u003c\/p\u003e\n\u003c!-- \/wp:paragraph --\u003e\u003c!-- wp:paragraph --\u003e\n\u003cp\u003e\u003cstrong\u003eBoberg\u003c\/strong\u003e: This vineyard grows on top of the Groenberg mountain in Wellington in decomposed granite. It was a neglected bush vine Chenin blanc vineyard that was recently resurrected and now being converted into an organically farmed parcel.\u003c\/p\u003e\n\u003c!-- \/wp:paragraph --\u003e\u003c!-- wp:paragraph --\u003e\n\u003cp\u003e\u003cstrong\u003eHangbal\u003c\/strong\u003e: A super old bush-vine Chenin blanc that grows on the lower slopes on the northern side of the Groenberg. This is OUR favourite wine, not necessarily the best. The one that we as a team like the most. It is not bound to an area or varietal - it is an assembly of interesting things that differs from year to year according to whatever performed well that specific season.\u003c\/span\u003e\u003cspan\u003e\u003c\/span\u003e\u003c\/p\u003e\n\u003ch3\u003e\u003cspan\u003eThe Story:\u003c\/span\u003e\u003c\/h3\u003e\n\u003cp\u003eIn October 2015 I was sitting on a plane heading to Joburg, next to a guy who was (or so it seemed) plugged into his computer with wires and stuff. It looked like he was communicating with the machine in a way. Once we had landed I asked him what on earth he was doing. He told me that he and his clinical psychologist business partner had started a marketing company called Neural Sense, based in Cape Town.\u003cbr\u003e\u003c\/p\u003e\n\u003c!-- \/wp:paragraph --\u003e\u003c!-- wp:paragraph --\u003e\n\u003cp\u003eThey conduct market research by tapping into people's subconscious reactions to various inputs. I love weird things, so I told him I make wine and if ever he wanted to do something with wine he was welcome to get in contact. And he did. Three months later I was sitting at the table in my winery hooked onto machines. All my subconscious reactions (in the LIMBIC part of my brain) to each of the 21 components were to be measured and recorded - a camera looking me in the eyes (for eye reactions), a thing on my finger (for blood oxygen levels), a heart rate monitor on my chest, something on my arm (for arousal levels e.g. heat\/sweat) and a mobile EEG device on my head (for monitoring my brain waves).\u003cbr\u003e\u003c\/p\u003e\n\u003c!-- \/wp:paragraph --\u003e\u003c!-- wp:paragraph --\u003e\n\u003cp\u003eIt was the time of year where I had to make up final blends and I was sitting with 21 different white wine components in barrel, which were ready for blending and bottling. They were all different varietals from different areas and vineyards. So my assistant winemaker, Julia, took samples from all the barrels and put them into glasses, which my wife marked from 1 to 21. For each wine I would first close my eyes, then open them and they would start recording with the camera, hand me any wine and prompt me to nose, taste and spit - constantly monitoring and recording my heart rate, blood stuff and activity in my subconscious.\u003cbr\u003e\u003c\/p\u003e\n\u003c!-- \/wp:paragraph --\u003e\u003c!-- wp:paragraph --\u003e\n\u003cp\u003eOf course I can’t control my subconscious - before I think of reacting, I already had. We tasted through all 21 wines. I obviously spat, washed my mouth with water in between and we even did a few with clean water in my mouth and used that as a control or base reaction. This process took a whole day. I like to call it work. Their job was now to analyse the data. The way I understand it is that they look at all the parts of my brain that reacted, compare it with all the other blood and heart monitors and then work out with mathematical algorithm what I liked and disliked. \u003cbr\u003e\u003c\/p\u003e\n\u003c!-- \/wp:paragraph --\u003e\u003c!-- wp:paragraph --\u003e\n\u003cp\u003eThe analysis of the data took months, so in the meantime Julia and I decided to blend a control - the best possible white blend from the same 21 parcels - making use of our conscious mind; the ORBITOFRONTAL CORTEX. When the results came, the two wines were so different! We blended both and bottled the 2 wines. Please note - we are NOT trying to prove something with this experiment. We were just trying to have fun. And we did… So, LIMBIC 2015 - Wellington Chenin blanc, Darling Chenin blanc, Swartland Clairette blanche, Upper Hemel and Aarde Pinot Gris and Stellenbosch Viognier And ORBITO FRONTAL CORTEX 2015 - Piekenierskloof Grenache blanc, Swartland Clairette blanche, Swartland Fernão Pires, Elgin Semillon and Voor Paardeberg Verdelho. \u003cbr\u003e\u003c\/p\u003e\n\u003c!-- \/wp:paragraph --\u003e\u003c!-- wp:paragraph --\u003e\n\u003cp\u003eThe label: The face of the person I did as a linocut. So I was forced to be creative. Strategic vineyard-site selection is where all wine begins. I was mostly focussed on many unusual varietals of which there were very little on offer, so in a way it made it easy to choose a site. You take what you can get.\u003c\/p\u003e\n\u003c!-- \/wp:paragraph --\u003e\u003c!-- wp:paragraph --\u003e\n\u003cp\u003eBut I wanted to start making Bordeaux - stuff like Cabernet Sauvignon, Cabernet franc, Merlot, Petit Verdot and Malbec. The Helderberg has many plantings but I didn’t have a clue how to separate the chaff from the wheat. And no money to pay someone to do it for me.\u003c\/p\u003e\n\u003c!-- \/wp:paragraph --\u003e\u003c!-- wp:paragraph --\u003e\n\u003cp\u003eSo this one particular day I was driving past a vineyard and saw something strange: the picking team was wearing white surgical gloves! I pulled off the road and asked the pickers who they were picking for. At the time there were rumours going round about these guys and I knew that they were spending obscene amounts of cash on local and international consultants in areas like viticulture and soil science - basically terroir fundi's. Their ultimate goal: to sift through the huge amount of Bordeaux vineyards on offer to pick only the very best. So I asked the farmer if I could buy the grapes as close as possible to the piece going to the White Gloves.\u003c\/p\u003e\n\u003c!-- \/wp:paragraph --\u003e\u003c!-- wp:paragraph --\u003e\n\u003cp\u003eThis is my confession about how I started chasing the White Gloves. Where they bought, I bought as close to them as possible. Sometimes right next to them. It was that simple. Just for the record - I am a huge fan of Swartland white blends.\u003c\/p\u003e\n\u003cp\u003eThe image of South African wines has changed dramatically over the past 10 years and the Swartland played a huge part in this. Their wines, especially the Rhône-style white blends are top notch. They are fun, young, energetic and unique and started to gain international fame. Stellenbosch, however (where I studied winemaking), is the original EMPIRE of South African wine. Like most of us, I like to support the underdog, and in the case of white blends, the Empire became exactly that.\u003c\/p\u003e\n\u003cp\u003eSo I created a white blend based on similar varieties - a combination that could give some of the Swartland white blends a go. The empire is therefore now striking back at the Swartland. The label consists of two sections. On the left part of the label you will see a half star, which was the logo for the \"Swartland Revolution\". We forget quickly and the days of getting excited when opening a bottle of Tassenberg is long gone. So it was then that in February 1994 I walked into Western Cape Liquor Store in Stellenbosch and bought my first bottle of TAS for R3.50. In the (student) years to follow, I partook in a lot of Tassenberg drinking (to put it mildly).\u003c\/p\u003e\n\u003c!-- \/wp:paragraph --\u003e\n\u003cp\u003e \u003c\/p\u003e\n\u003c!-- wp:paragraph --\u003e\n\u003cp\u003eAll that drinking gave me ample opportunity for reflection and I came to the conclusion that I wasn't particularly fond of the whole wine, but there was one flavour component in the wine which I loved. That flavour component reminded me of fresh strawberries - a sweet, green, wholesome sort of freshness.\u003c\/p\u003e\n\u003c!-- \/wp:paragraph --\u003e\n\u003cp\u003e \u003c\/p\u003e\n\u003c!-- wp:paragraph --\u003e\n\u003cp\u003eIn 1997 I completed a month-long harvest stint in the (then) capital city of Tassenberg - Eersterivier Wine Cellar, Stellenbosch. We literally made hundreds of thousands of litres of Tassenberg. This is where the light went on for me and I finally identified the grape which produces my mysterious fresh strawberry component. It was Cinsaut! Ever since then I’d had the dream of producing a Cinsaut that tastes exactly the way I would like to remember TAS. The first straight Cinsaut I bottled was in 2007 - a Wellington Cinsaut as part of the Educational Range. The wine was good but not exactly the style I was after.\u003c\/p\u003e\n\u003c!-- \/wp:paragraph --\u003e\n\u003cp\u003e \u003c\/p\u003e\n\u003c!-- wp:paragraph --\u003e\n\u003cp\u003eNot long thereafter, I received a tip-off from a well-respected winemaker friend about a little Cinsaut vineyard located in the lesser-known Breedekloof Valley. At that stage, the grapes went to a big cooperative winery where it basically disappeared into cheap red blends. Whenever they stumbled upon great wines made from varietals not grown in South Africa, they would try and get their hands on some clean plant material and (being of the less patient\/more dynamic type) simply smuggled these vines into the country.\u003c\/span\u003e\u003c\/p\u003e\n\u003ch3\u003e\u003cspan\u003eThe Story:\u003c\/span\u003e\u003c\/h3\u003e\n\u003cp\u003eThey used various techniques, one of them being… tie it to your leg, drop your pants to cover it and walk through the NOTHING TO DECLARE section at the airport as if you have… NOTHING TO DECLARE - you know the feeling...\u003c\/p\u003e\n\u003c!-- \/wp:paragraph --\u003e\u003c!-- wp:paragraph --\u003e\n\u003cp\u003eBack in SA they would then reproduce and plant little vineyards, do trials on them and plant larger ones (to state the obvious: this was completely illegal, distributing diseases being the main risk). I, however, have seen first-hand that the type of farmer who went through all the effort to do this, is almost without fail completely passionate, super psyched-up, forward-thinking farmers\/winemakers - serious producers. So they would, without a doubt, bring in clean, great quality vines.\u003c\/p\u003e\n\u003c!-- \/wp:paragraph --\u003e\u003c!-- wp:paragraph --\u003e\n\u003cp\u003eNothing to Declare is a tribute to these vine smugglers. Providing us, the new generation winemakers, the foundation to take this industry to new heights.\u003c\/p\u003e\n\u003c!-- \/wp:paragraph --\u003e\u003c!-- wp:paragraph --\u003e\n\u003cp\u003eIn 2012 and 2013 I made a wine that was driven by one of these illegally smuggled grape varieties. It was registered with the government as Chenin Blanc. I called it “Nothing to declare”. Since then this particular vineyard went through a process of amnesty and was now declared legal. So this wine grew from there, using that vineyard as a base and combining that with as many of the not so traditional South African varietals I have in the Winery.\u003c\/p\u003e\n\u003c!-- \/wp:paragraph --\u003e\u003c!-- wp:paragraph --\u003e\n\u003cp\u003eThe Label: I did a chalk drawing on the one side of one of the barrels - an image of vine cuttings tied to a man’s leg, about to be covered by his pants. After a few months, the image faded. To solidify the image, I engraved it into the wood like it was done in the olden days. So in February 2015, after bottling the first vintage, I needed a label. I bought printing ink and applied it to the surface of the carved image. Botrivier is known for many wonderful things, but being home to the Big 5 is definitely not one of them.\u003c\/p\u003e\n\u003cp\u003eThe pods at Kol-Kol are booked out at least a year in advance and if you’ve ever been there you’ll understand why. We, on the other hand, are on the more spontaneous side of things when it comes to having fun, so getting on any type of list is a bit problematic.\u003c\/p\u003e\n\u003cp\u003eBack in the day I bought some Tinta Barocca from Botrivier and the wine turned out to be a great showman for the area. Since then, I have been keeping my eyes open for a way back into that part of the country. Then in 2020, a late night internet-advert put me into contact with Jo, a fired-up lawyer from Cape Town who farms 2 small vineyards on his property in the Van Der Stel pass (Botrivier) at the entrance of the famous Kol-Kol Lodge.\u003c\/p\u003e\n\u003cp\u003eWhilst picking the Sewejaartjie Grenache noir vineyard in 2021, Jo mentioned that if I ever needed to get onto the last minute cancellation list of Kol-Kol, I should let him know and he’ll see what he can do. And that is how we ended up on that Kruger-National-Park-soundtrack stoep. Turns out that a neighbouring farm owns a lion (as you do).\u003c\/p\u003e\n\u003cp\u003eSewejaartjie - a 100% Grenache noir from that vineyard. The wine is on the light side of the spectrum but still heavier than all our other Grenache. Again, a very individual expression of the Van der Stel pass.\u003c\/p\u003e\n\u003cp\u003eThe name Sewejaartjie: After our awesome weekend I was speaking to my UK importer Damon and it turns out that he got engaged at one of the Kol-Kol cabins named Sewejaartjie. In English, the name translates to \"The everlasting daisy\" or just “everlastings” - a famous fynbos flower found in the area that, as its name implies, lasts forever when dried and stored properly. He told me that he and his clinical psychologist business partner had started a marketing company called Neural Sense, based in Cape Town.\u003c\/p\u003e\n\u003cp\u003eThey conduct market research by tapping into people's subconscious reactions to various inputs. I love weird things, so I told him I make wine and if ever he wanted to do something with wine he was welcome to get in contact. And he did. Three months later I was sitting at the table in my winery hooked onto machines. All my subconscious reactions (in the LIMBIC part of my brain) to each of the 21 components were to be measured and recorded - a camera looking me in the eyes (for eye reactions), a thing on my finger (for blood oxygen levels), a heart rate monitor on my chest, something on my arm (for arousal levels e.g. heat\/sweat) and a mobile EEG device on my head (for monitoring my brain waves).\u003c\/p\u003e\n\u003cp\u003eIt was the time of year where I had to make up final blends and I was sitting with 21 different white wine components in barrel, which were ready for blending and bottling. They were all different varietals from different areas and vineyards. So my assistant winemaker, Julia, took samples from all the barrels and put them into glasses, which my wife marked from 1 to 21. For each wine I would first close my eyes, then open them and they would start recording with the camera, hand me any wine and prompt me to nose, taste and spit - constantly monitoring and recording my heart rate, blood stuff and activity in my subconscious.\u003c\/p\u003e\n\u003cp\u003eOf course I can’t control my subconscious - before I think of reacting, I already had. We tasted through all 21 wines. I obviously spat, washed my mouth with water in between and we even did a few with clean water in my mouth and used that as a control or base reaction. I had bought bits of grapes from the farmer during that year’s harvest (which all turned out really promising) and was doing my annual post-harvest farm visit with a fresh barrel sample for the farmer to taste.\u003c\/p\u003e\n\u003c!-- \/wp:paragraph --\u003e\u003c!-- wp:paragraph --\u003e\n\u003cp\u003eOne of his grape clients had previously persuaded him to farm a little Cinsaut vineyard by method of minimum intervention. Not in an organic kind of a way, but more towards a 300% leave-the-vineyard-to-be kind of way.\u003c\/p\u003e\n\u003c!-- \/wp:paragraph --\u003e\u003c!-- wp:image --\u003e\n\u003cfigure class=\"wp-block-image\"\u003e\u003cimg alt=\"\" src=\"https:\/\/gallery.mailchimp.com\/20207e7491d110e972ec6af28\/_compresseds\/168c661f-4277-4250-bfdd-b4b8cf8f9e17.jpg\"\u003e\u003c\/figure\u003e\n\u003c!-- \/wp:image --\u003e\u003c!-- wp:paragraph --\u003e\n\u003cp\u003eTo make a long story short, due to many contributing factors, all the grapes of this little Cinsaut vineyard ended up going to the pigs and he was blaming his minimum intervention 300% leave-the-vineyard-to-be client for all of this. To make matters worse, for the 62 years prior to this, the vineyard hardly produced grapes sufficient to produce wine with. You see, his grandfather planted the vineyard in 1951 and had still used a horse to plough the land. The vineyard is on the edge of the mountain in a little valley and the only food source around. So as the berries accumulated sugar, the birds would hop from bunch to bunch pricking the berries with their beaks, causing them to rot. And by the time the grapes ripened there weren’t much left. Now things like this interest me. I asked him if we could give it one more try.\u003c\/p\u003e\n\u003c!-- \/wp:paragraph --\u003e\u003c!-- wp:paragraph --\u003e\n\u003cp\u003eHe reluctantly agreed on the condition that he farms the block the way he believes one should. I, in turn, agreed to buy bird nets to cover the vines and we had a deal. So in mid 2014 the vines were neatly pruned and he took care of the weeds. That spring, after bud break, the first soft green shoots appeared. Everything looked good! Then, one Sunday afternoon, I received a photo on whatsapp. It was the vineyard in question with about 20 odd sheep feeding in the vineyard and no sign of the newly formed soft shoots - only brown stumps remaining as the vineyard celebrated it’s 64th birthday. Late that Friday night his sheep had broken through the fence and ate everything green in colour. So there went another crop and the farmer got even more despondent.\u003c\/p\u003e\n\u003c!-- \/wp:paragraph --\u003e\u003c!-- wp:paragraph --\u003e\n\u003cp\u003eBut he didn't give up and so, in June 2015, he raised the fence. Immediately gaining respect. From then on, the farmer, his son and his grandson (the current farmer) only drives Suzuki 4x4’s on the farm. The current farmer also happens to be the Western Cape champion, racing in the Dunes along the West Coast of South Africa - with his little hyped-up supercharged Suzuki - hence the inspiration for the label.\u003c\/p\u003e\n\u003cp\u003eVerdelho is a really interesting variety to farm with in South Africa. It loves heat and has this unique characteristic of maintaining high acid levels in really ripe conditions. This is a variety that you need to keep an eye on during harvest. I then took a 10 year Merlot sabbatical, but the varietal’s been bugging me throughout. I like the power but then… I do like finesse. Not easy to find in South Africa. In 2020 the penny finally dropped. I realized that whenever I liked one, it came from a vineyard that grows in weathered granitic soil.\u003c\/p\u003e\n\u003cp\u003eIt is not as if you can taste the weathered granite in the wine. Weathered granite is lighter soil with very little clay content - therefore well-drained, warmer marginal soil which results in harsher growing conditions. Normally height above sea-level equals cool temperatures during ripening and it’s common knowledge that the biggest challenge for Cabernet producers are unripe, green tannins. But, what the heck! I thought the story was great and for the first time ever I committed to making wine from vineyards I had never set eyes on. \u003cbr\u003e\u003cbr\u003eToday we know a lot more. What I did not know back in 2015 was that the site’s radiation levels (intensity of sunlight) were off-the-charts high, not the temperature... the sunlight! You know when you are standing on a snow-covered slope high on the Alps in Switzerland? On a clear day the sunlight is warm and intense but the temperatures are still low. Same thing.\u003cbr\u003e \u003cbr\u003eCombine these conditions with very cold night temperatures and you get a longer hang time (the time the grapes spend attached to the vine). It slowly accumulates sugar while absorbing massive amounts of sunlight, and sunlight is what ripens. But the truth is that I cannot take credit for it at all, I am just not all that strategical. At the time and still today my office is located next to my winery in a very old dilapidated barn type of building. When I moved in I transferred the run down barn into a personal office\/lounge with a nice Friday braai facility at the back. In old Berlin, Germany, a typical residential property would have a main house where the owner lived, and then had a sort of second house at the back called the HINTERHOF where a second family would live.  And at the back of the HINTERHOF they usually had a KABUFF. Which was a little garden sort of shack-house for the very poor people to live in. They watched it and before you could say “Yank”, my winery was full of them. They wanted to do business…\u003c\/p\u003e\n\u003cp\u003eOne month later Theo-Donald and I were sitting on a plane to Hollywood - all expenses paid. Arriving at the airport in Los Angeles, a girl in an orange Jeep picked us up. It was ours to drive while there. The next 5 days were crazy. I could write a book… Their idea was to show the film to various investors and role players in Hollywood, promoting the possibility of a wine-related series with Epileptic Inspiration as the pilot program.\u003c\/p\u003e\n\u003cp\u003eJust to warm up we screened the film in their film studio in downtown LA. The next morning we surfed Malibu on longboards and then a whirlwind of events coincided with insider local connections to all. We, on the other hand, are on the more spontaneous side of things when it comes to having fun, so getting on any type of list is a bit problematic.\u003c\/p\u003e\n\u003cp\u003eBack in the day I bought some Tinta Barocca from Botrivier and the wine turned out to be a great showman for the area. Since then, I have been keeping my eyes open for a way back into that part of the country. Then in 2020, a late night internet-advert put me into contact with Jo, a fired-up lawyer from Cape Town who farms 2 small vineyards on his property in the Van Der Stel pass (Botrivier) at the entrance of the famous Kol-Kol Lodge.\u003c\/p\u003e\n\u003cp\u003eWhilst picking the Sewejaartjie Grenache noir vineyard in 2021, Jo mentioned that if I ever needed to get onto the last minute cancellation list of Kol-Kol, I should let him know and he’ll see what he can do. And that is how we ended up on that Kruger-National-Park-soundtrack stoep. Turns out that a neighbouring farm owns a lion (as you do).\u003c\/p\u003e\n\u003cp\u003eSewejaartjie - a 100% Grenache noir from that vineyard. The closest vineyard to the ocean is 3km and the furthest 3 hours drive.\u003c\/span\u003e\u003c\/p\u003e\n\u003ch3\u003e\u003cspan\u003eThe Story:\u003c\/span\u003e\u003c\/h3\u003e\n\u003cp\u003eThe Swartland Revolution was exactly that: a revolution initiated by Swartland farmers which turned the premium wine market upside down. Suddenly premium higher-priced Bordeaux-style Stellenbosch wines had to share the stage with premium Rhone-style Swartland blends. And so it happened then, that for the past 8 years, the media stuck Cabernet Sauvignon in a dark and dusty corner - not “cool” enough.\u003c\/p\u003e\n\u003cp\u003eAs some of you might know, at the moment I make wine from 30 varieties. I thought it a bright idea to do something for the neglected, fallen-from-grace Cabernet Sauvignon. I subsequently identified vineyards with vastly different heights above sea level: 7 near Somerset West (at 32 to 391 m), 2 on the outskirts of Tulbagh (both at 310 m) and 2 in the Witzenberg’s Koue Bokkeveld (at 734 and 755m).\u003c\/p\u003e\n\u003cp\u003eWhen I first started speaking to the masters of Cabernet here at the Southernmost tip of Africa, the first thing mentioned by most was the dreaded Greenness in Cabernet Sauvignon - a very unwelcome herbaceous \/ vegetative character. This develops due to high levels of Pyrazines present in the wine - something that's determined by the ripeness level of the grapes. The longer the grape bunches get exposed to sunlight during the growing period, the less Pyrazines - resulting in less greenness in the end product - reducing herbaceousness and amplifying fruit.\u003c\/p\u003e\n\u003cp\u003eHere in South Africa we have a unique situation: although we have plenty of sunshine, it is hot and dry. In most instances, by the time the grapes are ripe for picking, it hasn't had long enough sun exposure for the Pyrazines to get to an acceptable level. And if you leave it on the vine for longer, the sugar level gets too high. These sugars are then transformed during fermentation into alcohol resulting in rather high alcoholic wines.\u003c\/p\u003e\n\u003cp\u003eSo in general, Cabernet creators are in fact chased by the Green Monster. Defended by some, feared by most. What confuses me, though, is that one could argue that this greenness is a stylistic characteristic of wines closer to the ocean, which makes it acceptable. Or does it? Where the exact point lies where herbaceousness turns into greenness - I am not sure.\u003c\/p\u003e\n\u003cp\u003eThat’s why I decided to make a Cabernet Sauvignon led blend and identified 9 vineyards from different heights above sea levels. The closest vineyard to the ocean is 3km and the furthest 3 hours drive.\u003c\/p\u003e\n\u003cp\u003eWe made them all separately and aged them all in French oak for one and a half years - picked mainly when we thought the grapes tasted best. Situated on the lower slopes of the Helderberg, it overlooks False Bay.\u003c\/p\u003e\n\u003cp\u003eGlancing over towards the ocean that day, I could clearly see that the off-shore wind was blowing. This was good news to the Strand local I am, as the elusive off-shore wind grooms the waves, making them perfect for my local surf spot. I made a mental note to get a move-on with my sampling, no time to lose. But 20 minutes later, as I once again raised my head from my berry-picking, grape-squashing exercise, I glanced over the bay. D’oh! (as Homer Simpson would say) - the wind had turned onshore.\u003c\/p\u003e\n\u003cp\u003eI could clearly see the tell-tale \"wit perdjies\" on the horizon heading towards shore. In a few minutes the perfectly groomed waves would be destroyed. Deflated, I carried on with the task at hand.\u003c\/p\u003e\n\u003cp\u003eThen, another 20 minutes later it hit me - SEELUG! I was mostly focussed on many unusual varietals of which there were very little on offer, so in a way it made it easy to choose a site. You take what you can get.\u003c\/p\u003e\n\u003c!-- \/wp:paragraph --\u003e\u003c!-- wp:paragraph --\u003e\n\u003cp\u003eBut I wanted to start making Bordeaux - stuff like Cabernet Sauvignon, Cabernet franc, Merlot, Petit Verdot and Malbec. The Helderberg has many plantings but I didn’t have a clue how to separate the chaff from the wheat. And no money to pay someone to do it for me.\u003c\/p\u003e\n\u003c!-- \/wp:paragraph --\u003e\u003c!-- wp:paragraph --\u003e\n\u003cp\u003eSo this one particular day I was driving past a vineyard and saw something strange: the picking team was wearing white surgical gloves! I pulled off the road and asked the pickers who they were picking for. At the time there were rumours going round about these guys and I knew that they were spending obscene amounts of cash on local and international consultants in areas like viticulture and soil science - basically terroir fundi's. Their ultimate goal: to sift through the huge amount of Bordeaux vineyards on offer to pick only the very best. So I asked the farmer if I could buy the grapes as close as possible to the piece going to the White Gloves.\u003c\/p\u003e\n\u003c!-- \/wp:paragraph --\u003e\u003c!-- wp:paragraph --\u003e\n\u003cp\u003eThis is my confession about how I started chasing the White Gloves. Where they bought, I bought as close to them as possible. Sometimes right next to them. It was that simple. Normally height above sea-level equals cool temperatures during ripening and it’s common knowledge that the biggest challenge for Cabernet producers are unripe, green tannins.\u003c\/p\u003e\n\u003cp\u003eBut, what the heck! I thought the story was great and for the first time ever I committed to making wine from vineyards I had never set eyes on. \u003cbr\u003e\u003cbr\u003eToday we know a lot more. What I did not know back in 2015 was that the site’s radiation levels (intensity of sunlight) were off-the-charts high, not the temperature... the sunlight! You know when you are standing on a snow-covered slope high on the Alps in Switzerland? On a clear day the sunlight is warm and intense but the temperatures are still low. Same thing.\u003cbr\u003e \u003cbr\u003eCombine these conditions with very cold night temperatures and you get a longer hang time (the time the grapes spend attached to the vine). It slowly accumulates sugar while absorbing massive amounts of sunlight, and sunlight is what ripens. I am always on the lookout for something interesting and Stellenbosch Verdelho fits the bill.\u003c\/p\u003e\n\u003cp\u003eHe is the buyer for this little vineyard but the 2014 crop was huge and his tanks were full. I bought what grapes he had left and the wine turned out to be fantastic! So obviously I would love to buy some every year, but the production of a normal year is not high enough to accommodate another buyer. So I became an Aasvoël  - an Afrikaans word for a ”vulture” - sitting on a pole, watching the vineyard. If something falls off the truck, I pick it up (figuratively speaking of course!). In other words, if it is a high production year, I get some grapes. In 2015 I got nothing, 2016 and 2017 came and went and I was still sitting on the pole - eagerly watching. Their wines, especially the Rhône-style white blends are top notch. They are fun, young, energetic and unique and started to gain international fame. Stellenbosch, however (where I studied winemaking), is the original EMPIRE of South African wine. Like most of us, I like to support the underdog, and in the case of white blends, the Empire became exactly that.\u003c\/p\u003e\n\u003cp\u003eSo I created a white blend based on similar varieties - a combination that could give some of the Swartland white blends a go. The empire is therefore now striking back at the Swartland. The label consists of two sections. On the left part of the label you will see a half star, which was the logo for the \"Swartland Revolution\". We forget quickly and the days of getting excited when opening a bottle of Tassenberg is long gone. So it was then that in February 1994 I walked into Western Cape Liquor Store in Stellenbosch and bought my first bottle of TAS for R3.50. In the (student) years to follow, I partook in a lot of Tassenberg drinking (to put it mildly).\u003c\/p\u003e\n\u003c!-- \/wp:paragraph --\u003e\u003c!-- wp:paragraph --\u003e\u003c!-- \/wp:paragraph --\u003e\u003c!-- wp:paragraph --\u003e\n\u003cp\u003eAll that drinking gave me ample opportunity for reflection and I came to the conclusion that I wasn't particularly fond of the whole wine, but there was one flavour component in the wine which I loved. That flavour component reminded me of fresh strawberries - a sweet, green, wholesome sort of freshness.\u003c\/p\u003e\n\u003c!-- \/wp:paragraph --\u003e\u003c!-- wp:paragraph --\u003e\u003c!-- \/wp:paragraph --\u003e\u003c!-- wp:paragraph --\u003e\n\u003cp\u003eIn 1997 I completed a month-long harvest stint in the (then) capital city of Tassenberg - Eersterivier Wine Cellar, Stellenbosch. We literally made hundreds of thousands of litres of Tassenberg. This is where the light went on for me and I finally identified the grape which produces my mysterious fresh strawberry component. It was Cinsaut! Ever since then I’d had the dream of producing a Cinsaut that tastes exactly the way I would like to remember TAS. The first straight Cinsaut I bottled was in 2007 - a Wellington Cinsaut as part of the Educational Range. The wine was good but not exactly the style I was after.\u003c\/p\u003e\n\u003c!-- \/wp:paragraph --\u003e\u003c!-- wp:paragraph --\u003e\u003c!-- \/wp:paragraph --\u003e\u003c!-- wp:paragraph --\u003e\n\u003cp\u003eNot long thereafter, I received a tip-off from a well-respected winemaker friend about a little Cinsaut vineyard located in the lesser-known Breedekloof Valley. At that stage, the grapes went to a big cooperative winery where it basically disappeared into cheap red blends. And for good reason I soon learnt. I had bought bits of grapes from the farmer during that year’s harvest (which all turned out really promising) and was doing my annual post-harvest farm visit with a fresh barrel sample for the farmer to taste.\u003c\/p\u003e\n\u003c!-- \/wp:paragraph --\u003e\u003c!-- wp:paragraph --\u003e\u003c!-- \/wp:paragraph --\u003e\u003c!-- wp:paragraph --\u003e\n\u003cp\u003eOne of his grape clients had previously persuaded him to farm a little Cinsaut vineyard by method of minimum intervention. Not in an organic kind of a way, but more towards a 300% leave-the-vineyard-to-be kind of way.\u003c\/p\u003e\n\u003c!-- \/wp:paragraph --\u003e\u003c!-- wp:image --\u003e\n\u003cfigure class=\"wp-block-image\"\u003e\u003cimg alt=\"\" src=\"https:\/\/gallery.mailchimp.com\/20207e7491d110e972ec6af28\/_compresseds\/168c661f-4277-4250-bfdd-b4b8cf8f9e17.jpg\"\u003eTo make a long story short, due to many contributing factors, all the grapes of this little Cinsaut vineyard ended up going to the pigs and he was blaming his minimum intervention 300% leave-the-vineyard-to-be client for all of this. To make matters worse, for the 62 years prior to this, the vineyard hardly produced grapes sufficient to produce wine with. You see, his grandfather planted the vineyard in 1951 and had still used a horse to plough the land. The vineyard is on the edge of the mountain in a little valley and the only food source around. So as the berries accumulated sugar, the birds would hop from bunch to bunch pricking the berries with their beaks, causing them to rot. And by the time the grapes ripened there weren’t much left. Now things like this interest me. I asked him if we could give it one more try.\u003c\/figure\u003e\n\u003c!-- \/wp:image --\u003e\u003c!-- wp:paragraph --\u003e\u003c!-- \/wp:paragraph --\u003e\u003c!-- wp:paragraph --\u003e\n\u003cp\u003eHe reluctantly agreed on the condition that he farms the block the way he believes one should. I, in turn, agreed to buy bird nets to cover the vines and we had a deal. So in mid 2014 the vines were neatly pruned and he took care of the weeds. That spring, after bud break, the first soft green shoots appeared. Everything looked good! Then, one Sunday afternoon, I received a photo on whatsapp. It was the vineyard in question with about 20 odd sheep feeding in the vineyard and no sign of the newly formed soft shoots - only brown stumps remaining as the vineyard celebrated it’s 64th birthday. Late that Friday night his sheep had broken through the fence and ate everything green in colour. So there went another crop and the farmer got even more despondent.\u003c\/p\u003e\n\u003c!-- \/wp:paragraph --\u003e\u003c!-- wp:paragraph --\u003e\u003c!-- \/wp:paragraph --\u003e\u003c!-- wp:paragraph --\u003e\n\u003cp\u003eBut he didn't give up and so, in June 2015, he raised the fence. In early November we covered the whole vineyard in bird nets. Weathered granite is lighter soil with very little clay content - therefore well-drained, warmer marginal soil which results in harsher growing conditions. When I moved in I transferred the run down barn into a personal office\/lounge with a nice Friday braai facility at the back. In old Berlin, Germany, a typical residential property would have a main house where the owner lived, and then had a sort of second house at the back called the HINTERHOF where a second family would live.  And at the back of the HINTERHOF they usually had a KABUFF. Which was a little garden sort of shack-house for the very poor people to live in. It is non-vintage which means that all the wine in the bottle is not from the same vintage. We picked the vineyard in two sections in 2021 - the first picking on a relatively low sugar and a second picking as a riper component. A combination of the two pickings make up 50% of the blend and were aged for 2 years in older French Oak barrels. The other 50% of the wine was an early picking of the same vineyard the following year (2022) which spent one year in barrel. \u003cbr\u003e\u003cbr\u003eSometimes, very inconveniently, the name and label of a wine just doesn’t happen when it’s supposed to. With the first vintage of this wine in 2018 that was exactly the case and subsequently, for quite some time, I just referred to it as TBC on my price list - Name to be confirmed.  One of my distributors, fed-up of waiting for the name to be confirmed, eventually said; “Why don’t you just call it TBC?!”\u003cbr\u003e\u003cbr\u003eSo TBC it was, but a label? At the time it was my youngest son's 7th birthday party and he wanted me to build him a leopard cake - in 3D of course… To shape a leopard body is doable (I’ve had some practice… 3 kids 6,10 and 13 at the time made it 29 practice rounds in total), but a head of a leopard is beyond my scope of expertise. So, I took his teddy bear and applied paper mache to his head. After it dried I removed the bear shaped head and painted it as the head of a leopard. We forget quickly and the days of getting excited when opening a bottle of Tassenberg is long gone. So it was then that in February 1994 I walked into Western Cape Liquor Store in Stellenbosch and bought my first bottle of TAS for R3.50. In the (student) years to follow, I partook in a lot of Tassenberg drinking (to put it mildly).\u003c\/p\u003e\n\u003c!-- \/wp:paragraph --\u003e\u003c!-- wp:paragraph --\u003e\u003c!-- \/wp:paragraph --\u003e\u003c!-- wp:paragraph --\u003e\n\u003cp\u003eAll that drinking gave me ample opportunity for reflection and I came to the conclusion that I wasn't particularly fond of the whole wine, but there was one flavour component in the wine which I loved. That flavour component reminded me of fresh strawberries - a sweet, green, wholesome sort of freshness.\u003c\/p\u003e\n\u003c!-- \/wp:paragraph --\u003e\u003c!-- wp:paragraph --\u003e\u003c!-- \/wp:paragraph --\u003e\u003c!-- wp:paragraph --\u003e\n\u003cp\u003eIn 1997 I completed a month-long harvest stint in the (then) capital city of Tassenberg - Eersterivier Wine Cellar, Stellenbosch. We literally made hundreds of thousands of litres of Tassenberg. This is where the light went on for me and I finally identified the grape which produces my mysterious fresh strawberry component. It was Cinsaut! Ever since then I’d had the dream of producing a Cinsaut that tastes exactly the way I would like to remember TAS. The first straight Cinsaut I bottled was in 2007 - a Wellington Cinsaut as part of the Educational Range. Nowadays, before planting, farmers make use of professionals who scan the soil and dissect and analyse the different soil layers, physically as well as chemically. They study topographical data and in some cases make use of satellites and even drones. They construct terroir models in order to understand… \u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003eViticulturists (like Jaco Engelbrecht who works for me on a consultancy basis) also map the great Grand Cru vineyards of Europe which enables them to compare our new sites to the greats of the world. All this is done with one goal in mind: figuring out what to plant where! \u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003eUltimately, however, they feed from decisions made in ancient times. Times when they got it right without satellites, drones and engineering surveyors. Times when they had time to observe… One such approach that was often used, is the Autumn Equinox theory.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003e In the Northern Hemisphere the autumnal equinox falls on 22\/23 September, as the sun crosses the celestial equator on its way south. In the Southern Hemisphere the Autumn equinox occurs on 20\/21 March, when the sun moves back north across the equator - otherwise known as the “Harvest moon\". \u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003eTraditionally it marked the end of the harvest season, where they took stock of what was grown and gathered and gave thanks for what they had received. So their theory was very simple: plant whatever crop ripens a few days before, on, or after (basically as close as possible to) the Autumn Equinox. \u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003eAnd that got me thinking about Elgin. During February and early March when the heat waves hit the Western Cape, grapes in Elgin are still green, with sugars around 16° Balling. The vines have plenty of energy to sustain the heat and by the time the heat waves have passed, moderate temperatures take the grapes through a mild, slow ripening phase. This enables the vines to produce fully ripe grapes. Immediately gaining respect. From then on, the farmer, his son and his grandson (the current farmer) only drives Suzuki 4x4’s on the farm. \u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003eThe current farmer also happens to be the Western Cape champion, racing in the Dunes along the West Coast of South Africa - with his little hyped-up supercharged Suzuki - hence the inspiration for the label. Verdelho is a really interesting variety to farm with in South Africa.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003eIt loves heat and has this unique characteristic of maintaining high acid levels in really ripe conditions. This is a variety that you need to keep an eye on during harvest. Cruising along at the 100km\/h speed limit, I came to a very winding stretch of road leading towards the Witzenberg pass. Suddenly, for a split second, I thought I saw something in the middle of the road. I had just come through a super sharp bend and had to jump on the brakes with both feet. When I finally got my 470 000-km-on-the-clock Toyota to stop, there, on the white line in the middle of the road, stood a little blonde boy. \u003c\/span\u003e\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003e\u003cspan id=\"about_wine_body\"\u003eI guessed him around a year and a half old. He was in his nappies and had a white T-shirt on, perfectly camouflaged on the white line. Unsure of what to do once I'd taken him out of the road, I thought it a good plan to prompt him and see which direction he takes off in (with myself of course right behind).   \u003c\/span\u003e\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003e\u003cspan id=\"about_wine_body\"\u003eAbout 200 meters further along the road he (we) crossed a little bridge heading towards the other side of the canal. He turned up a dirt road which led to a farmhouse about 300 meters up a hill. Keeping up to his snail-like pace, we arrived at the house more or less 10 minutes later (in my experience with farm dogs, it wouldn’t have been wise to carry him). When the gardener saw us approaching, he called out to a woman at the house and judging by her reaction, she must’ve been his mom and he must’ve been missing for a while.   It was a bit of an emotional and chaotic environment so, knowing he was safe, I just turned around and left without introducing myself.   \u003c\/span\u003e\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003e\u003cspan id=\"about_wine_body\"\u003eSo each time I present a tasting with Little William wine as part of the line-up, I get the same question: “Why is it called, Little William?”, followed almost without fail by: “What does the family have to say about you calling a wine, Little William?” My answer is always the same: “I never went back, they don't even know the wine exists. But I am convinced there will be this one day where I’d be sitting at some local bar in Knysna, drinking a beer all by myself when the young guy next to me turns to me and introduces himself as William from Ceres.\" And I’ll be able to tell him: “Eendag, lank, lank gelede het hierdie oom jou lewe gered!”   \u003c\/span\u003e\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003e\u003cspan id=\"about_wine_body\"\u003eFor 4 years I had the privilege of telling the story of little William. Until last year. When Chapter 2 happened.   In November, we took our youngest son for a minor operation at Panorama Mediclinic, Tygerberg, Cape Town. The lady at reception looked at us with a puzzled look on her face. We later learnt that there had been a mistake on the paperwork and they were under the impression that he was an adult. They had subsequently booked him into an adult ward. The man next to him had drunk a cup of coffee at 6:00am that morning with milk in. His operation therefore had to be postponed and he obviously missed his theatre time slot. He had to wait almost the whole day for the next slot. He and Sebastian eventually left for the theatre at more or less the same time. \u003c\/span\u003e\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003e\u003cspan id=\"about_wine_body\"\u003eI went to get us a cup of coffee, and as she always does, Aneen started making conversation with the milk-in-the-coffee guy’s wife. On my return Aneen said: ”They are from Ceres, tell her the little William story.” I cringed, thinking: \"Why would I do that??\" I tried to let her comment slide and filled the awkward silence with useless words. We carried on with the small talk and she ended up telling us that she is a vet and her husband is a farmer. “Where do you farm in Ceres?”, I asked. “In the Witzenberg mountains, on a farm called Blah-blah-blah”, she answered.   And, as you’ve probably guessed by now, that was the name of the farm where I dropped little William that morning. \u003c\/span\u003e\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003e\u003cspan id=\"about_wine_body\"\u003eIt started dawning on me that it might be my Knysna-bar-thing moment happening in a totally bizarre, different way. “Do you have a son called William?” I asked. “No”, she replied, “but my nephew is called William and they live on the same farm, in the house next to the road.” We did the sums and he would’ve been exactly 1 and a half years at the time. So it turns out it wasn't a beer-in-hand pub in Knysna, but a coffee-in-hand hospital in Cape Town. Their ultimate goal: to sift through the huge amount of Bordeaux vineyards on offer to pick only the very best.
