If you're coming from Malmesbury direction and head towards Darling, about halfway there you take a right onto a dirt road towards Hopefield aiming your car towards nothingness. You then drive until the rattle of your bakkie is replaced by the glide-like feeling of soft thick sand.
Left at the horse and tyre (this sounds like an Irish pub but it is literally a horse and a tractor tyre). Go past the sheep kraal, onwards through 2 gates, take a sharp right and drive until you have to put your bakkie into 4x4. Here you will find proper thick sand!! This is the home of ULTRA. A Chenin blanc bush vine vineyard planted 42 years ago.
It is warm and dry. No irrigation pipeline in sight. Only the tough survive and these plants had to dig deep to find water and nutrients. Interestingly enough, there is a natural aquifer running through these parts (which I show you in the Kortpad Kaaptoe film). Also in that area, quite close to the surface, you'll find the iron-rich koffie klip subsoil. And that is where the plants find their magic. Deep down in the subsoil.
Our goal is to work closely with Jan and ensure we get the basics right. As the saying goes: "The difference between a good and a bad farmer is 10 days." Timing is everything. And in the cellar we guide the wine to the right fermentation vessel and leave the wine to do it's natural programmed-by-nature thing. Spontaneous fermentation in older oak as well as clay pots called amphorae. The wine is crunchy and fresh, still weighty with length and muscle. With this release, we include a bottle of the 2023 vintage to show you the way these wines age.
